While your bacon is cooking..grab a medium bowl and stir together:
1Cup of Mayo
1Cup of Sour Cream
1Cup of Cream Cheese
1/2 Cup of Shredded Mozzarella
1 Can of Artichokes (packed in water)..drain well!
1 bag of frozen, but thawed and drained Spinach
S&P to taste
Crumble up the cooled and crispy bacon and add HALF of the bacon to the mixture and stir!
Add all of the mixture to an oven safe skillet and sprinkle the top with some more Shredded Mozzarella..
Bake at 350, uncovered until it is bubbling and has a slight golden color on top..
Before serving sprinkle the top with the other half of the crispy bacon!!
