OMGosh..talk about incredible! Onion Rings have nothing on these!
If you’re in the mood to spice things up in the snack/appetizer department, give these healthy, baked Poblano Rings a try!
I totally adore the Poblano Pepper, and I think it’s the most severely underused, and unpopular of all the peppers..(my spell check doesn’t even recognize it..lol!)
SO..here is just one of the hundreds of amazing ways to give them some of the attention they deserve.
And what a healthy and yummy way to do it!

Your simple supplies! |
? What you’ll need for 2 portions:2 Poblano Peppers (one per per person)
2 eggs
2 Cups Panko Crumbs
1/2 Cup Parmesan Cheese
S&P
Ranch dressing for dipping
Directions:
Form a breading station of: ?
Ready for the oven..yay! |
Bowl #2 Eggs
Bowl #3 Panko, Parmesan, s&p to taste
Mix the Parmesan with the Panko.
Remove the stems and insides from the peppers, and slice them into rings..approx. 1/2″ thick.
Toss them in the flour, then the eggs, and coat them thoroughly in the Panko-Parmesan mixture.
Set them on a rack on top of a baking sheet

Bake them at 350 degrees for about 45 minutes, or until they’re golden and crispy!
Serve them with Ranch for dipping! ~Enjoy!
*HINT* However may of these you think you’ll need..double it! 🙂
