Sometimes you’ve just gotta say “what the heck” to your diet..and THIS is one of those times!
This chowder is a must-make for the big, baggy sweater winter season..because, it’s comforting and delicious.. but it’s not exactly the lowest calorie meal to indulge in, and one bowl is never enough!
But it’s so worth it! 🙂
It’s so easy, makes a ton and freezes well, so you can make a big batch, and enjoy it all winter!
Here’s how!
What you’ll need:
8oz. Bacon, chopped
1/4 cup Olive Oil
6 cups chopped yellow onions (4 lg. onions)
4 tbsp. Butter (1/2 stick)
1/2 cup Flour
S&P to taste
1/2 tsp. ground Turmeric
12 cups Chicken Stock (3 boxes)
6 medium diced potatoes, unpeeled.. (about 2lbs).
10 cups corn kernels, fresh (10 ears) or frozen (3 lbs.) …If possible, use fresh!
1 cup half-and-half
1 cup Sour Cream
1/2 lb. Sharp Cheddar
