Well Thanksgiving is coming to a close, and I was one of the unfortunate ones who got the gift of Fruit Cake as a hostess gift! Not a candle, not a bottle of wine..fruit cake!
Somehow I’ve managed to make it my whole life without ever trying it, but when it’s a gift, there’s at least a courtesy taste in order!
Luckily I have a smile that can hide pain because, I umm..
Anyway..there I was, left with an entire doorstop package of it and didn’t want to just throw it away! Sooo, I resorted to the number one food fix-all..
I deep fried it! 🙂
I’m not going to say that it made it delicious..but it did improve it a little bit! And if anything, it made it fun for the kiddos to gobble it up..therefore, removing it from existence!
I served it with some colorful frosting for masking the flavor dipping, and that seemed to help! If you’re left with some fruit cake, and need to distract from the taste..just fry it up!
What you’ll need:
1 thingy of Fruit Cake
Pancake/Waffle Batter
Canola oil
Frosting
Directions:
Well..the fruit cake comes pre-sliced, so no need to worry about that!
Follow the box instructions to prepare the batter..however, make it slightly thinner than regular pancake/waffle batter!
Coat each fruit cake slice in the batter and fry it up in the canola oil.
Drain on paper towels, dust with powdered sugar & serve with a side of frosting for dipping! 🙂

Much, much simpler is to melt some butter in a frying pan and add slices of fruit cake about an inch thick and just fry them for a minute or two on both sides – stunning, absolutely stunning – I stole this idea from my Mom…… RIP
