Yes, I realize that at first glance this recipe might sound a tad bit hick-a-billy, redneck, trailer trash, slippers at Walmart-ish. But child please..you know you love you some Velveeta! And when added to the cornbread it takes on a delicious life of its own! The way that the melty, gooey cheese oozes out from the center of the warm cornbread..it’s epic!
So I say, embrace your inner Hillbilly, at least for the sake of this recipe..and join me as I embrace mine! 🙂
I just adore Velveeta!! I mean, what other cheese is stuck in permanent semi-melt mode? There’s not much that can’t be made better by the addition of some good old Velveeta! Combine it with cornbread and BOOM..you’ll be scanning your TV for some Nascar, and popping open a Schlitz! Heck, you don’t even need a full set of teeth to enjoy this soft and scrumptious dish! 😉

1 box of Cornbread
1 Velveeta brick, (I used 6 slices about 1/4″ thick, of the Mexican Velveeta for some kick in the pants)
Directions:
Mix up yer Cornbread batter according to the box directions
Cuss at someone for no good reason
Layer half of the batter in your baking dish
Add a layer of Velveeta slices
Put yer cigarette down & swig some Whiskey
