This basic Oatmeal Cookie recipe is SO easy and SO delicious that it’s now my go-to Cookie anytime I need to bring Cookies somewhere! That can be a huge gamble, since not many of them have a fair shot at making it out the door..lol!
These are an extra special version of my basic recipe because I just had to go and add cake batter all up in them! Now…not only are they moist, not only are they scrumptious & sweet..they’re also light, fluffy, tender and cakey!
Oh..let’s not forget that they’re also totally ooey AND gooey, bursting at the seams with warm melty Caramel!
~Ahhh~~Yeah..I know!
They are irresistable to human lips…and probably irresistable to human hips too! But~~oh well! 🙂
Just take a peek here and you’ll understand…then hurry into the kitchen and make a batch (or 2) of them..trust me!
What you’ll need for 12 good sized Bombs (this recipe doubles very easily for more Cookies):
Kraft Caramels..one per each Bomb
1 Box of Tres Leche Cake Mix …Or ANY Cake mix flavor will work! (ONLY ONE cup of the dry Cake mix is used for 12 cookies, feel free to double for more) Or save the leftover Cake Mix for something else. 🙂
1-1/2 cups of Oats
2/3 cup Brown Sugar…packed
1/2 cup (one stick) Butter..softened
1 large Egg
1/2 tsp. Baking Soda
1/2 tsp. Cinnamon
1/2 tsp. Vanilla Extract
A pinch of Salt
Directions:
UNWRAP ALL OF YOUR CARAMELS! 🙂 Set them aside..
In a large bowl, cream together the Brown Sugar, Vanilla, Egg and Butter, set aside..
In another bowl, sift together the Cake mix, Baking Soda, Cinnamon, and Salt…
Add the dry ingredients into the wet and mix until well combined…
Fold in the Oats..
Scoop out approx. one tablespoon or so, of the Cookie Dough and form it completely around one Caramel to make a ball.
Set them on a parchment lined baking sheet about 2-3″ apart…
***Put them into the fridge to chill, while the oven preheats to 350 degrees. This will keep them nice and thick as they bake..
Bake them for approx. 12 minutes, or until they’re golden and they do this…
Let them cool slightly…
Everyone LOVES these Cookies…so if you don’t eat them ALL yourself, do your very best to share!
But definitely serve and eat them warm …for the best ooey gooey ever!

Im confused about the cake mix…first says one box of tes leches cake mix, only one cup is used and then the oats and then 3/4 cup of tres leches mix plus the powder…so am I using 2 boxes of the cake mix? sorry but these look outstanding and I want to make the asap so I need to get that clarified…thanks
The tres leches cake mix comes with a separate packet of dulce de leche powder, so the entire packet of powder plus 3/4 cup of the cake mix equals one cup of dry mix… You can use one cup of regular cake mix instead, since it won’t have the dulce de leche powder in it.

this is where I am confused…sift cake mix in then add cake mix and powder to bowl…..so you add cake mix twice?

Was this recipe edited/revised? When I made these on Monday I could swear the instructions said to mix the flour, cake mix, cinnamon, soda? The recipe didn’t specify how much flour to use, so I just added a half cup as a guess. Today the recipe makes no mention of flour?

Your saying in the recipe that you put the cake mix in twice. That’s why it’s confusing. Do you use it twice, or just the one cup. In your recipe you use 2 cups of the mix.
I am also confused. I am assuming you add a cup of cake mix and also the 3/4 plus the dulce de leche mix stuff.
Looks yummy but the wording is confusing….especially in the directions where there are two separate steps for cake mix yet in the previous replies don’t help to clear up the confusion.
Perhaps you could re-write the instructions and omit the ‘options’. The alternative options can then be listed last as ‘substitutions’…at the end of the recipe. I was confused too. Maybe this would help. Thanks!
Thanks for posting this. Yes, I too am confused as cake mix is listed twice. Cake mix is added at two different times, following these instructions. We first sift it in with the baking soda, etc. Then we add more to the dry ingredients? None of the comment responses clear this up. Could you please? Thanks!
I simplified the recipe to make a bit more sense~ Simply use ONE CUP of any cake mix flavor you like. 🙂
my question is not a comment but if I was to us the whole box of cake mix would I have to double or triple the other ingredients cause I usually make more then 12 cookies
