I’m so in love with all things ‘Buffalo’ right now! NO~~not that stinky brown animal you see at the petting zoo..lol! I’m talking about ‘Buffalo’ flavor!
~That spicy, red and delicious addition to almost anything and everything! It was only a matter of time until I came up with a way to make all of that intense flavor into a quick two-bite delight! And here we are! 🙂
Fluffy individualized Biscuits are bursting with ALL of that amazing Buffalo Chicken deliciousness. Just to take it over the top, each Buffalo Bubble Bun is topped with that authentic sprinkle of creamy Blue Cheese…Oh, and a nice crunchy side of Celery that no one will ever eat..haha! 🙂
What you’ll need for 8 super stuffed Buffalo Bubble Buns:
1 container of Pillsbury Grands Flaky Layers Biscuits (8 count)
1 cup shredded or finely chopped Chicken Breast
1 can Cream of Chicken Condensed Soup
1/2 cup Buffalo Wing Sauce
1/2 cup Shredded Cheddar
1/4 cup Crumbled Blue Cheese for topping
Salt and Pepper to taste
A muffin/cupcake baking tin
Celery for your conscience..lol
Directions:
Ina medium bowl mix the Chicken, Buffalo Sauce, Cream of Chicken, Shredded Cheese and Salt and Pepper (to taste) until well blended…
Gently press one biscuit down into each muffin tin and work the dough up the sides, forming a cup.
Now fill that cup with about 1 heaping tsp. of the Chicken mixture, be sure not to over fill or the Biscuits will not fully cook on the bottom. Top them with some Blue Cheese.
Bake them at 350 for approx. 25 minutes, or so. Be sure to check them to make sure they’re not burning.
Ready for the Oven Lovin’…
Make sure to peek in on them now and then so they know you love them…
Let them cool just a little …
Plate them up…
These are perfect as an appetizer, or football snack..even a light Dinner…

Just made these! I was making them at my boyfriend’s house and realized he didn’t have a muffin pan. So, I made them into buffalo chicken pillows instead by folding the dough all the way around the chicken mixture. I brushed a little bit of melted butter on top. Turned out really good still! I added a little bit more chicken to my mixture and next time I would use a little less buffalo sauce because the brand I used (Moore’s Buffalo Wing Sauce) was a bit overpowering. Great recipe!
