I have a new obsession with this little thing I came up with called ‘Bottoms-Upcakes’ .. stick with me here! 🙂
They’re simply “cupcake-ish” style treats with an unapologetic bottle of booze all turned upside down inside of them, ..dripping time-released boozy-goodness deep inside that oh-so-thirsty cake …lol!
And the possibilities are endless, so stay tuned for many more “Up-Cake” versions of this one.
This method not only creates a one of a kind drunken dessert delight, it also has a WOW factor that will keep everyone
The boozy mini serves as a ‘good-times’ IV..if you will, for that cake which clearly benefits from the boozy boost.
Not to mention that the flavors are a match made in heaven and your party/get together/movie marathon /..err, night alone at home/.. will never be the same. 🙂
~Put those kiddos to bed, and Bottoms-UP..cakes!
What you’ll need:
Coca-Cola
Mini bottles of dark OR light Rum ..one per each Upcake.
Chocolate Cake
Cocoa Powder/Powdered Sugar for dusting..optional
Oven-safe glasses or mugs for baking
Directions:
Mix up the cake batter according to the box instructions, BUT~ replace the liquid with COKE!
*NOTE* If you’re using the same boxed cake mix as I did, simply follow the directions for both of the chocolate components and add accordingly to each cup. Otherwise, simply do whatever your box says to do.
Fill up your “cups” 3/4 full with the batter.
Bake them at 350 for approx. 15-20 minutes, or until they’re fully cooked through and firm…
Let them cool… and lay on that caramel frosting nice and generous-like…
When you’re ready to serve, simply open a mini Rum, and stick that baby into the “Bottoms-Upcake”..
Grab a spoon for all that luscious-boozy goodness…

I would love to try this recipe, but I cannot find caramel frosting ANYWHERE. Does it have to be caramel frosting, and if not, do you have any other recommendations?
It doesn’t have to be caramel frosting~ 🙂 Any frosting will work, and you can even drizzle some caramel sauce on the top if you’d like.
