Let me clarify “secret ingredient” right here, right now..instead of making you read all the way down to the bottom of the page to figure it out..

“Secret ingredient” really just means > a light dusting of some subtly-sweet pancake mix, yep.. that’s it!
And as simple as that sounds (and as simple as that IS) .. the pancake mix gives these potatoes a one of a kind flavor and light crispiness that’s beyond compare and remembered for a long-lonnnng time!
It’s NOT like anyone is going to say..”WOW..these potatoes taste like pancakes” (not that there’s anything AT ALL wrong with that..lol)
But, no one will ever know unless you tell them, ..all they will know is that these potatoes are like nothing they’ve ever had, and they won’t be able to figure out why..?!! ~good times!
SUPER crispy and subtly sweet, toasty on the outside and creamy in the middle, they’re melt-in-your-mouth delicious!
~Make LOTS!
What you’ll need for a HUGE pile of perfect potatoes:
2-4 medium/large potatoes
1 cup or so of dry pancake mix..your fave!
2 tbsp. baking powder (not shown)
oil for frying
salt for salting..to taste
Directions:
Cut the Potatoes into about 1″ pieces..peeling them is optional!
Bring a large pot of water to a boil and boil the potatoes until they’re tender. Making sure that they’re not “falling apart tender” and still have some life left in them..
Drain the boiled potatoes very well…
Then, lay them onto some paper towel and let them cool & dry, about 10 minutes or so…
Sprinkle them generously with the pancake mix and the baking powder, so they’re evenly coated…
Let them set and dry a bit as your oil heats up to 350 degrees…
Now, fry them up, making sure that all sides are evenly golden…

Drain them on some paper towel and salt them while they’re hot.
Serve them up with some syrup, as a side dish.. or a main-snack!! Pile them high and watch them disappear before your eyes like a magic show!… ~Enjoy! 🙂
