I really believe that these crispy, cinnamony cookies have restored my faith in love, life & happiness! Yep..these wafer thin, super flavorful Cinnamon Roll Cookies have that much power..LOL! And as if to say they know me..they provide all of this over-the-top amazing texture and flavor, with almost no work at all! What more could I ask for?! 🙂
When you bite into this lace cookie, hopefully while they’re still warm, you will notice the crispy crunch, but then you’ll be hit with chewy and sweet cinnamon Heaven! The creamy frosting tops them off and knocks them out of the ballpark..into some random yard, where even the grumpiest of old people wouldn’t care! Whip some up in a matter of minutes and take your day from blahh to ahh!
What you’ll need:
Sugar Cookie Dough..I used Pillsbury
1/2 Cup Cinnamon
1/2 Cup White Sugar
1/2 Cup Brown Sugar
Cream Cheese Frosting..I used store bought
Directions:
Simply roll out the Sugar Cookie Dough and evenly spread the Cinnamon and Sugars over the top
Roll it up and chill it for about 15 minutes
Slice the cookies super thin, like a 1/2 ”
Lay the slices onto a baking sheet and gently press them down, making them even thinner 🙂 Bake them at 350 degrees, for approx, 12 minutes or until they’re golden, crispy & lacey! Top them with swirls of Cream Cheese Frosting and devour while warm! ~Enjoy! 🙂
