It’s been so cold today I found myself actually missing the warm Sun and all that goes with it. Just looking at this bright stack of yumminess took the chill off right away!
I love Tomatoes, both Red and Green. I see them as two different veggies/fruits?~~each with their own recipe potential! The green Tomatoes are perfect for “Fried Green Tomatoes”! Oh, how I love these things! Especially when you can add them to an otherwise typical Caprese Salad and instantly make it epic! How fun is it to use the words “Fried” and “Salad” in the same sentence..haha! 🙂
Just look at all of these good-for-you colors! And, as we all know, fried food is healthy as long as there’s a veggie near by! 😉
This kicked up salad offers the most amazing & perfect balance of flavors and textures.
What you’ll need:
Some green tomatoes (I’m note sure if and where these can be purchased, I picked them from my garden)
*If tomatoes (green or red) are out of season, Tomatillos will work great!
A red tomato
Sliced fresh Mozzarella
1 pack of Prosciutto
Fresh Basil leaves
1 cup of Corn Meal/Polenta
2 egg whites
1/2 cup of Milk or Cream
S&P to taste
Some flavored oil..or Olive Oil
A drizzle of Balsamic Vinegar
A dash of Red Pepper Flakes..optional!
A dollop of Mascarpone..optional!
Directions:
Slice the green tomatoes about 1/2″ thick
Crisp up and crumble a few slices of the Prosciutto..(just lay a slice onto a paper towel and nuke it for 30 seconds..let cool)
Reserve the rest of the Prosciutto for layering!
Prepare a breading station..
BOWL #1 is wet! ..add: The Egg whites and Cream, blend well
BOWL #2 is dry..add: The Corn Meal, Parmesan and S&P, blend well
Dip each slice into the wet and then the dry bowls..coat them very well!
On a hot griddle drizzle some Oil (I always use Canola)
Fry them up until golden on both sides.
Now it’s time to stack..woo-hoo!
Simply slice the red Tomato and the Mozzarella, making sure everything is pretty much of equal thickness!
Layer..layer..layer!
Then drizzle….Ahhh, yummy!
I like to top the whole shebang with a little dollop of Mascarpone, a splash of Balsamic, a nice piece of crispy Prosciutto and a sprinkle of Red Pepper Flakes to wake the whole thing up! ~Enjoy! 🙂
