I’m in love with blueberries..I mean seriously in love! Everything from their color to their health benefits, to their incredible flavor! One of the very best ways to enjoy these amazing little babies is in a pie!
A juicy, flaky, saucy, purpley …fattening piece of blueberry pie. And while a giant piece of pie definitely has its place, it’s probably best left far away, as we’re departing the holiday calorie train we’ve all been riding! These are perfect cuz “one bite never hurt anybody!” 🙂
All you’ll need for 8 bites:
1 can of blueberry pie filling
a mini muffin tin
1 egg..for egg wash
sugar..for sprinkling
These mini little pies pack the same punch as an entire slice of pie, without all the guilt! They’re so good that seriously, 1 or 2 is all you’ll need to be happy..for a while! And it leaves some calories in your bank for a tiny scoop of ice cream too!
Your entire pie (even with ice cream) will fit on your spoon, how adorable it that?! 🙂
Directions:
Roll out the pie crust, large enough so that 8-3″ circles (the bottoms) and 8-2′ circles (the tops) can be cut out!
Place the larger circle of dough down into the mini tin and fill with some filling.
Slice an “X” in the smaller circle of dough and top the itty bitty pies with them. Crimp the edges so the pies are sealed, brush the tops with some egg wash and sprinkle them with sugar.
Bake at 350 for about 20 minutes, or until the pies are golden!
Let them cool..be patient, you can do it!! While you wait, you can eat those blueberry edges that decided to spill out! 🙂
But make sure to pop one in your mouth while they’re still warm! Ahhh…a bite to remember! ~Enjoy your one-bite blueberry pies! 🙂

These are just perfect! They would be great for a party, too. I’m certifiably crazy so it would be hard for me to use a bought crust instead of making a homemade one, but using the bought crust definitely makes these little guys way quicker to make!

Made 8 of these last night and they were wonderful. Instead of using canned blueberry pie filling, I made a blueberry compote with Alaskan wild blueberries that my son and I picked this last summer. It was wonderful. I plan on using the rest of the compote for the blueberry pie cookies. Thanks for your recipes. I love them.
