Staying true to the colors of the holiday, this is a yummy and healthy way to warm up all the little (and big) ghouls and goblins after a cold night of trick-or-treating!

In a large soup pot (I used a cast iron cauldron ..lol) Add:
2 tbsp. Olive Oil
1  large link of pre-cooked Kielbasa sausage (sliced at an angle)
1 chopped jalapeno pepper
1 chopped medium onion
1 cup of chopped carrots
Dash of S&P
Saute until the sausage is slightly golden and the veggies are translucent!
Then add:
3 cloves of chopped garlic

1 box of Chicken Stock

1-15oz. can of Black Beans with liquid
2 cups of Re-fried Black Beans (about half of a 13 oz. can)
Stir well to combine, cover and simmer on low heat for 30 minutes. Stirring every 5 minutes or so!

Serve topped with some sour cream and chips for dipping!

*HINT* If you want to thicken it up, simply stir in some more of the re-fried black beans, and for even more spice, use an extra jalapeno..if you dare!
