This salsa puts a delicious spin on the regular salsa that we’re all used to! Its creamy texture and mild spice are an awesome combination!
Here’s how to make it!
You will need:
2 Poblano Peppers
2 cloves of garlic (or more)
1 medium onion
2 Cups of Chicken Stock
1 Cup of Sour Cream
2 “drizzles” of Maple Syrup?..
Simple ingredients! |
? (a little syrup goes a long way..keep tasting before you add more) This is an unusual ingredient, but its flavor hangs out in the background, and rounds out the spice of the salsa! It really helps make this salsa so delicious, without ever knowing what it is!
Besides..adding Maple Syrup to salsa was Tyler Florence’s idea..and he’s so adorable smart! 🙂

Directions:
First, you will need to roast your Poblanos! I find that the easiest way to roast them is right on the gas burner of my stove.
However..you can put them on a baking sheet and roast them in the oven at 400 degrees as well!
Just make sure to turn them regularly, until the skin is charred!

I think that’s what tastes so great! But if you prefer to peel them, it will still be delicious!
In a medium stock pot add the chicken stock, garlic and onion, s&p. remove all the seeds and stems from the pepper and add them to the pot!
Simmer for about 5 minutes.
Add that mixture to a food processor, and pulse until it’s blended! Now add in the sour cream and a couple of drizzles of the maple syrup..pulse again to blend! Yay..It’s ready!
All that’s left to do now is find some chips and dig in!
It’s great warm..OR chilled!!

*HINT* This salsa also works as an amazing “sauce” by using it on enchiladas, tacos or even nachos!

This looks Intriguing. I like the combo of flavors. The maple syrup seems a bit weird but I know from experience that adding these odd, surprise flavors that hover in the background can make a truly awesome sauce!I may try this with veggie broth for vegetarian friends. Not sure if that will change things too much. Good recipe!

Give it a try, just use a tiny bit of the syrup, it's all you'll need! And I'm sure veggie stock would be just fine! Hope you like it! 🙂
