Our highest temperature this week has been in the low 30’s, and for me that means fuzzy socks, my comfy couch..and chili!!
So, I played around with this recipe as I went along, and the final product was delicious.
Just perfect on a cold winter’s night! So of course, I’m sharing it! 🙂
The Polenta takes this white bean and sausage chili to a completely higher level of yummy!
It adds such a creamy, and hearty element and highlights all the other flavors incredibly.
So..if you’re looking to try a unique kind of chili, or if you love polenta..give this a try!

3 carrots..peeled and cut into small pieces
8 cups chicken broth or stock
2 cups sour cream (reserve 1 cup for garnish)
1 cup polenta (cornmeal)
1 cup shredded mozzarella (for garnish)
1/2 cup sun dried tomatoes, chopped (for garnish)
1 tbsp. cumin
s&p to taste
Directions:
Brown up the sausage, and crisp up the bacon..set aside!

In a medium pan, saute the onion, potatoes and carrots until tender.
About an hour before serving, add in the 1 cup of reserved sour cream and the polenta..stir until the polenta is fully cooked, and the chili is thick and smooth..it only takes a few minutes!
Garnish with some sour cream topped with a sprinkling of Italian seasoning, cheese, and sun dried tomatoes! ~Enjoy!!
