Spring has finally sprung! And even though I’m a winter girl at heart, with a huge love of cold weather, being snowed in and good old thunderstorms! I still totally get excited when the birds start chirping again and thoughts turn to charcoal grillin’, flip flops & golden suntans! Summer veggies are pretty darn good too, and corn is at the top of my list of faves! Give me a patio, a cold drink and a big bowl of Chips & Guacamole..and I’m one happy camper! 🙂
This Guac is extra special though, because I incorporated some crisp, fresh-off- the-cob Corn right into it! It provides the sweetest, crunchiest burst of Corn goodness with each spicy, creamy bite! Such a simple and easy addition that makes such an amazing difference! Stir some into your Guacamole next time and see for yourself..it’s so YUMM! 🙂
What you’ll need for my Summer Guacamole: (Feel free to double accordingly for however much you’ll need)
2 Avocados
1 Packet of Guacamole Seasoning (or whip up your own)
1/2 Cup of Fat Free Sour Cream
1/2 cup Chopped Cilantro
1 Ear of fresh Corn Kernels
1 Chopped tomato (not shown)
1 Chopped Jalapeno
S&P to taste
CHIPS!! 🙂
Directions:
In a medium bowl add all of the above ingredients and mix them all together until you reach your desired Guacamole consistency!
Serve with chips, find a sunny patio, make some Margaritas & relax! ~Enjoy! 🙂
