Sometimes even I can’t believe how long it takes me to finally try a great thing that’s been around forEVER! As much of a foodie as I am, I somehow made into my adult life without ever having a Popover! I have NO idea how they’ve managed to escape my lips until now, but they were totally worth the wait! They have got to be the most unique and delicious little bread treats ever!
Even though these babies don’t get super poppin’ high, they’re still SO fluffy, moist, chewy & cheesy. They make the perfect pop in your mouth one-biter! 🙂
I got so excited when I was able to create them SO easily at home! And of course I had to make them teeny tiny! As all of us girls know when food is small, it’s almost calorie free..right? ..right! Never mind that when food is teeny tiny, I’ll just eat way more of them…lol! 😉
In just a matter of minutes you can have a hot batch of these, chewy and cheesy, doughy nuggets of delight ready for snackin’, or as a delicious appetizer or bread course for a family dinner!
What you’ll need for approx. 24 puny poppers:
A mini muffin tin..(you can easily make bigger ones, just fill up any size muffin tin 3/4 full and bake. It will reduce your quantity.)
1 large egg
1/2 cup milk
1/4 cup canola oil
1 cup tapioca Flour (NO substitutions)..I found it at Whole Foods $4.00
1/2 tsp. salt
1/4 cup shredded cheddar
1/4 cup grated Parmesan, reserve a little extra to sprinkle on top before & after baking
Directions:
In a medium bowl (or food processor)add the egg, milk, oil, tapioca flour, and salt. Mix VERY well..until smooth as silk!
Mix in the cheeses.
Spray your muffin tin with non-stick spray…a.k.a food insurance!
Fill each well about 3/4 full, sprinkle the tops with a dusting of Parm, and a sprinkle of salt.
Bake for 15-20 minutes at 350 degrees..or until puffy & golden. Make sure to peek in on them as they’re puffing up..they like that! 😉
Serve these warm and fresh, if you look closely, you can see the amazing chewy, cheesy, bready center! Eat them fresh & fast..they’re not good cold!

Just made these, and YUM! They are like the rolls from Texas De Brazil, but they are crunchy on the outside. I loved them. Thanks for sharing!
