Sooo, what do you get when you fill Cinnamon Rolls up with creamy Ricotta, smooth Cream Cheese, and sweet Sugar, then roll them up, fry them and ummm..drizzle them with frosting and a dusting of Powdered Sugar? You getchurself a succulent, warm, delicious Cinnamon Roll dream come true that’s what!
These aren’t just Cinnamon Rolls anymore..now they’re an unforgettable culinary experience! Now they’re Blintzes..on steroids! 🙂
Put a pile of these bad boys on your table Christmas morning and everyone will think that’s their gift..lol!
These are so worth being good all year long for! 😉
What you’ll need for 8 Blintzes (increase accordingly for more)
1 Can of Pillsbury Cinnamon Rolls (8ct.)
1/2 cup low fat Ricotta Cheese
1/2 a pkg. of Cream Cheese (4oz.)
1/4 cup Sugar
1 egg yolk
1 tsp. Vanilla Extract
Powdered Sugar for dusting..optional!
Directions:
In a medium bowl mix together the Ricotta, Cream Cheese, Sugar, Egg Yolk and Vanilla until creamy and smooth..NO LUMPS! (A food processor helps!)..
Roll out each Cinnamon Roll until it’s thin and flat. Moisten the entire edge of the Roll with some water. Place a tbsp. of the filling onto the lower edge of the Roll, leaving a small border. Fold the lower edge up over the filling, fold the sides of the Roll inward, as though you’re folding an envelope. Roll the Blintz up and over the filling like a burrito…
Heat up about 2″ of Veg Oil in a skillet, and place the stuffed rolls in (3 at a time..they puff up) flap-side down into the hot oil. Brown them evenly on both sides…
Drain them on paper towel and let them cool, at least a little bit..
You can try one now..before the drizzle if you so desire…
Orrr..give them a nice, generous drizzle of the enclosed Pillsbury Frosting…
And, dust them with some powdered Sugar..because you can…

Yummmm! This sounds amazing! Now have adult kids returned home and wanted a special treat. Question: do you think these would be good if I made them night before and just fried in morning or should I just do filling night before and do rest in the morning? Trying to figure out how to simplify the morning.
I’d do the filling the night before and have everything ready..then assemble them right before you fry them! hope you love them! 🙂
