Once in a while something literally hijacks my brain at fork point, and takes over until I do exactly what it says! Each and every time that “something” is food..lol!
This time, the accused ‘hijacker’ are those crunchy, salty, and SO addicting Fritos! I tried to resist, put up a fight, but I didn’t stand a chance! I just had to take that Corny chip and turn it into a show-stopping appetizer/snack-thingy!
~And here we are!
Not only are these Frito Fritters going to become your most requested party treat, you will find yourself actually craving them, All. The. Time~! There’s nothing that these crunchy, corny, salty, cheesy bites won’t do for you and your taste buds! Make a HUGE batch of them and watch everyone start to grab gather.
PS..when they’re frying up, the smell in your kitchen will hypnotize you! Fried Fritos should totally be a candle! 🙂
What you’ll need for approx. 14 Fritters:
1 cup raw Corn Kernels
1/2 cup Shredded Sharp Cheddar
1/2 cup Corn Meal
1/2 cup coarsely crushed Fritos (by hand)
1/4 cup Flour
3/4 cup Milk
3/4 tsp. Baking Powder
3/4 tsp. of each..Salt & Pepper
Oil for frying..I used Canola
Directions:
In a medium bowl combine all of the above ingredients (except for the Oil)…
Mix it very well so the liquid can be absorbed and create a batter…
By hand, roll the Batter into 1″ balls…
Fry them in about 2″ of Oil, a few at a time, until they’re golden on all sides…
Add another sprinkle of Salt if you’d like, while they’re warm. It would be a crime to not eat one RIGHT now…
Then, do the right thing and share…
