I squeezed some inspiration for these cookies out of my Apple Pie Cookies ~those cookies took on a life of their own on the inter-webs and totally needed to be re-visited! This time they were visited by sweet Blueberries! Now, I’m not sure which of my 2 Cookie children love more..lol!
What I’ve discovered about these Pie Cookies, is that you can treat them JUST like regular Pie! Freeze them, wrap them, bake them as many times as you’d like to “freshen them up”, top them with Ice Cream, OR keep them on the counter for DAYS~ They’re bullet proof!

What you’ll need for 7-3″ cookies: ~feel free to simply double/triple the recipe for more cookies, or use a smaller sized cookie cutter..I just prefer the larger “Pie” look!
1 box of refrigerated Pie Crust..(I used the Pillsbury 2 pack)
3/4 cup Blueberry (or any flavor) Pie Filling
1 cup of sparkle/decorative Sugar…the pretty stuff! Regular is just fine too!
1 egg for egg wash..(1 egg, well beaten with a splash of water)
A dusting of flour to slightly roll out the dough to make them even with each other…
a 3″ round cookie cutter
Directions:
Unroll both crusts and spread one of them with the Pie Filling…
Now…cut the other crust into 18 even strips, this will be the lattice…
Place 9 of the strips onto the Pie Filling and peel back every other strip~ add the other 9 strips one at a time..weaving as you go, to form a lattice top…
Brush the lattice topped crust with some egg wash…
And a generous sprinkling of Sugar…
Cut them out with your cookie cutter~ any cutter you’d like will work. I like the 3″ round for a substantial pie-like cookie…
Using a spatula to transfer them, place them gently onto a sheet pan (I DIDN’T GREASE MY PAN) ~Bake them at 350 degrees for approx, 12 minutes. You just want them golden so keep an eye on them…
Let them cool and take a moment to enjoy their beauty and say “Ahhh~Wowww~Oooo~!
Now you can serve them up…
That means sharing and letting some go…
Maybe grab a few for yourself first…

Made these today to send to my dad while he’s recuperating. Blueberry pie is his favorite and just no way to mail a blueberry pie! These came out awesome! I did have to bake a bit longer than 12 minutes, but so worth it! Yes, I did taste them! Couldn’t send them away without a taste test! Thanks for the great recipe!,

Instead of using a round cookie cutter, cut them into squares and you won’t have any left over. Square cookies are just as good as round ones ☺️
Ok, now that I know what “popping candy” is.. I will try these.. but I am going to use a pizza cutter to cut them up. Should be almost NO waste!!

I’m not sure what I did wrong. I used the same brand crust as you did and followed all instructions exactly. The latticed crust never got nicely brown and flaky. They just look got uniformly tan and looked like fettuccini noodles
with a chewy, not flaky texture and tasted undercooked, yet I kept them in for 10 extra minutes and the bottoms were fully browned and getting overdone. I will try again with a different brand crust or else homemade.
