Yikes~ Here we have an almost embarrassingly good treat beyond treats! I present to you> Bacon Blondies! Some decadent, and devastatingly delicious dessert concoction that I’ve chosen to drench in Bourbon spiked Honey!
I’m not sure what’s wrong with me, but if this is wrong, I don’t want to be right…haha!
Try to wrap your head around a Brownie-like texture with the flavors of rich, warm Vanilla spiced cake batter, topped with sticky, sweet Bourbon and Honey soaked BACON!
~Call it dessert, and get it into your mouth…that’s all! 🙂
What you’ll need:
a square 8″ baking dish
1-1lb. roll of Pillsbury Sugar Cookie Dough
1 lb. Bacon…crispy and crumbled
The Topping/Filling:
3 Eggs
1 cup Light Corn Syrup
1/3 cup Sugar
5 tablespoons unsalted Butter…melted
1 tsp. Vanilla Extract
The {optional} Bourbon Honey:
1/4 cup Honey
a few “splashes” of Bourbon
ALL mixed together with love!
Directions:
Spray the baking pan with non-stick spray, and line it with some parchment paper. Make sure to over-extend the parchment so it hangs over the edges of the dish.
Gently press the Sugar Cookie Dough down ingot he bottom of the dish evenly. Par-bake it at 350 degrees for approx. 15-10 minutes.
While the crust is in the oven, mix up the Topping/Filling:
In a medium bowl combine the eggs, sugar, vanilla, butter, and corn syrup. Mix it up until it’s smooth and slightly thick…
When the Cookie Crust is slightly golden, but not all the way cooked yet, take it out and top it evenly with the crumbled Bacon.
Now pour the Topping/Filling evenly over the top…
Back into the oven it goes for another 30-45 minutes. Check it and make sure it’s firm and golden…don’t let it burn.
Let it cool…
If you’d like, mix together some Bourbon & Honey…
Drizzle it with the {optional} Bourbon and Honey mixture…let that sink into it nice and easy…

Bacon for dessert? Are you kidding me??? Last night my 20 year old requested chicken tater tot casserole for dinner. I used almost a pound of bacon in just a little 8″x8″ pan! Bacon for dessert might just be over the top but I don’t care!
I bet they would love chocolate chip bacon cookies,
