Well, it’s Summer, and we know what that means~ Ice cold adult beverages, and lots of char-cooked Chicken! Here I’ve managed to combine the two into one, delicious, beyond words mash-up! Talk about a match made in food heaven! If food had a heaven, this Chicken is what it would taste like!
I can’t think of a better combo of flavors! The light and fruity essence of the Blue Moon Beer totally tenderizes the chicken and infuses it with the most light, flavorful, almost refreshing taste. Top it with an Apricot Glaze and now you’ve reached the no-words zone! Yep..I’m now speechless~
Just trust me on this, and go make this! In a matter of about an hour, you too can cry tears of delicious joy! It’s the juiciest and most succulent Chicken dish EVER!! 🙂
What you’ll need to feed 4-6 people:
Chicken Thighs…I used bone in/skin on~ approx. 12 thighs
1 cup or so, of Apricot Preserves..or any fruit preserve you’d like
1 Can of Blue Moon Beer
The juice of 2 LARGE Oranges
Orange wedges
A large baking pan
Directions:
Lay out the Chicken pieces in a single layer.
Squeeze the Oranges over the Chicken..(you can add some salt and pepper now if you’d like)
Add some Orange quarters as well!
Pour the Beer over the Chicken…
Top each piece of chicken with a nice smear of Preserves…
Bake it at 400 degrees for approx. 45 minutes to an hour, making sure to keep an eye on it so it doesn’t burn~
Let it cool for a few minutes…
Now serve it up! ~Enjoy! 🙂
