Summer is right around the corner and it’s totally time to start incorporating some extra fruit into our diets right??! What better way to incorporate more fruit into our diets than with a little help from Bacon..lol!
~I like to believe that if the Bacon is actually making contact with the fruit, then it’s healthy by association! I know this sounds crazy..but please, just let me have it! 🙂
Seriously though, the balance and flavor contrast of this little treat is beyond compare. Salty, sweet and sticky Bacon becomes one, with warm, juicy Pineapple Spears, creating a one-of-a-kind fruity flavor fantasy come true! Do it!
What you’ll need:
Fresh Pineapple Spears
Bacon..one slice per spear
1 cup Brown Sugar
Directions:
Cut the Pineapple into spears…
Evenly coat each slice of Bacon in the Brown Sugar…
Wrap one slice of Bacon around each Pineapple Spear and bake them on a rack at 350 degrees for approx. 15 minutes …or until the Bacon is cooked, golden and sticky!
Let them cool just a bit, they are SUPER HOT!
Now you may dig in~~ and fall in love! ~Enjoy! 🙂
Tried this one yesterday but the sugar all slid off during the baking stage. Though it was yummy, it wasn’t as good as it could have been and definitely didn’t look anything like your picture. Any thoughts as to what went wrong? Oh we did do one small modification. We took jalapeños and sliced them ling0ways and included that jalapeño spear along side the pineapple under the bacon wrap.
The only reasons I can think of for the Sugar not sticking is either~ The Oven wasn’t hot enough, or the jalapeños created too much moisture. Other than that, the brown sugar should stick just fine, and candy itself onto the bacon and Pineapple! I LOVE the idea of jalapeño though..and I’m tempted to try it..haha! 🙂

does the bacon crisp up and is it a good choice as a cold finger food item for a memorial day get together?
It gets sticky/crispy if that makes sense …slightly chewy and crispy, room temp is fine 🙂
