When the 4th of July ‘snuck up’ on me (like all holidays do) and I found myself perplexed at my new found recipe responsibilities, I knew that I had to cook, and cook quick!  The very first thing that popped into my head was Chicken Wings. I’m not sure why, but they did.  🙂

It was hot outside, I was cranky and I just didn’t want the typical wet/thick breaded and heavily sauced Chicken Wings, NOPE~I wanted a light, crispy and almost fried texture Chicken Wing, without the umm.. “Fried” part!  Baked because it’s healthier a.k.a LESS WORK FOR ME..haha, but mostly because I needed to bank some calories for my annual ’embarrassingly loaded 4th of July Hot Dog’ (long story)..

What ended up happening were these light, crispy and almost potato chip flavored (Ooohh) Chicken Wings that were the hit of the entire day…no joke!

These Wings stole the show and commanded almost more “Ooo’s and Ahh’s than the grand finale fireworks show!  They’re so easy, and so delicious that no one left without the super simple recipe~!  Make a HUGE batch of these the next time you need to please lots and lots of people, you won’t go wrong!

What you’ll need:

2 lbs. of chicken wings

1 cup all purpose flour

1 tablespoon of baking powder

olive oil

Directions:

Dry the wings with a paper towel

In a large bowl, mix the wings with the flour and baking powder, until they’re evenly coated with a light dusting!

Place them onto a rack over a sheet pan and drizzle them with some olive oil.

Bake them at 450 degrees for approx. 40 minutes or until they’re golden and crispy.

Turn them over and drizzle them with some more olive oil.

Continue baking until that side is evenly golden and crispy.  A dash of salt at this point would be GREAT!

Let them cool a bit and serve them up with some Blue Cheese dressing and/or Hot Sauce!

Dig in and watch them go bye-bye!  ~Enjoy!  🙂
