What happens when you’re left with extra Cornbread batter and a bowl of delicious pulled pork? Hmmm…you fry it up and call it Fritters, of course! 🙂 Well, you didn’t really think I was going to waste it did you?! NO way..NO how! Not if I have a jug of oil in the pantry and a few extra minutes on my hands..lol!
SOoo..here we are! And once again, throwing things together in the kitchen (almost literally) has created a new all-time favorite, one of a kind dish, that will be made on purpose from now on!
These fritters are almost better than a regular pulled pork sandwich, and I don’t say that lightly! These are light, yet nutty from the err..fried Cornbread, and the meat somehow got even more flavorful, succulent and juicy!
~You have GOT to do this…it only takes a couple of minutes and you will LOVE them!
What you’ll need for 4-6 Fritters (double accordingly for more):
2-3 cups of Cornbread Batter..I used a dry mix and followed the instructions right on the box!
Approx. 1-2 cups of fully cooked and seasoned/sauced to your liking, Pulled Pork!
Oil for frying..I used Canola
A sprinkling of salt..totally optional!
Extra BBQ Sauce for dipping & dunking!
Directions:
In a medium bowl, simply mix up the batter with the pulled pork, making sure that it remains a somewhat thick batter…like a stuffed Pancake batter, if you will..lol!
Now drop one scoop at a time into the hot oil, and fry them up until they’re evenly golden on all sides…
Let them cool and drain for as long as your self control will allow.
Serve them up nice and warm…
With some extra BBQ Sauce..duh! ~Enjoy! 🙂
