Sometimes you just need want to wrap everything in bacon, fry it up, plop down on the couch with Netfilx and call it a day..right?!….RIGHT!
That kind of day was the inspiration for this little snack, and by ‘little snack’, I mean..uh, not little at all..haha! There’s really nothing small about bacon or cheese, especially when you put them together and uhhh..fry them, but sometimes you just have to do it!
~And I did.
Each melty mozzarella stick is perfectly balanced with the smoky, crispy bacon that hugs it like it’s never going to let it go. 🙂
~Make a big batch of these babies and get that remote ready~ : )
What you’ll need:
1 lb. bacon..2 slices per mozzarella stick!
approx. 6 mozzarella cheese sticks
oil for frying..I used Canola
toothpicks
Ranch for dipping…or any dippers you’d like!
Directions:
The first thing you need to do is FREEZE the CHEESE. 🙂 At least for a few hours!
Lay out a slice of bacon, and place a frozen cheese stick onto it..pulling up the bacon ends to cover each end of the cheese…
Now wrap another slice of bacon around the cheese stick, using it to secure the first bacon slice. Use a toothpick to secure the bacon while frying!
Fry them up in hot (350 degree) oil, until they’re crispy and golden, let them cool on some paper towel.
Serve them with some ranch for dipping! And DIG IN! ~Enjoy!! 🙂
For dipping, try mixing equal parts of Ranch dressing and Porcus Inférnum (the world’s best bacon hot sauce, bar none) … Uh.Mazing!
These are really good but the cheese hardened back up too quickly, didn’t stay nice and stringy like a mozz stick. Any thoughts?
Also I was impatient and used the cheese without freezing. Is that the cause?
The cheese can’t be low fat, part skim or any variation of such. It must be full fat/whole milk mozzarella to achieve an amazingly melty cheese pull..lol. I will amend the recipe with that note. The purpose of freezing them is simply so the bacon has time to crisp up. :). Hope that helps!! Lemme know if you need anything else.
Without freezing it didn’t seem like it oozed much as long as the bacon was wrapped tightly enough, so freezing might not be necessary if you’re impatient. 🙂
How would this be with Marinara sauce as a dip? Have you tried that?

Buy better mozzarella like the mozzarella balls instead of the string cheese. Cut in slices while frozen and see if that works better
I bought a bag of frozen mozzarella sticks and wrapped them in bacon. yumm with some dipping sauce.
Why the heck would you want to spoil the flavor covering it up with a dip, especially a yucky one like Ranch.

When I am unsure I preheat my oven to 350 degrees F. Check it after 20 mins if not done check every 5 mins after until done.
I enjoy my bacon much better baked than fried. I can pull it out when it is still soft but done.
I also often bake my bacon — did this work with the mozzarella sticks?
I tried baking them and it turned out to be a giant mess. The bacon took to long to crisp up so the cheese melted everywhere.
Yep, that’s why the directions say to fry them… 😉
You might try precooking the bacon some so that is it about half cooked before you put it in the pan. I cook my bacon in the microwave. It gets crispy and isn’t greasy.
I’m going to pre-bake my bacon. Let it cool somewhat but not to the point of losing its pliability. Then lay the frozen whole mozarella sticks on it and baking in a PREheated 450 oven! Cause I hate to lose that bacon grease into my deep-fryer.
