You know what’s fun?  Or I should say, do you know what *I* consider to be fun?

Anyone..anyone..??

I think it’s fun to take an innocent childhood treat and corrupt the ever-loving crap out of it with copious amounts of booze.. that’s what..lol.

And when I say ‘booze’, I’m talking about a tequila drenched toasty treat of epic proportions, I’m talking about a tequila shot to rival any shot you’ve ever had… yes, this “shot” has a charming sugary, child-like chaser all built in!!

Oh, stop..you know it’s fun, you know it’s flavorful…you know you’d do it.  😉

With that in mind, I figured ..why not start at the top with the pinnacle of tasty treats, the good old POP TART?!  What could be bad about a perfectly, booze-soaked, deep fried pastry?

A fried-until-flaky, glazed-until-gooey, shadow of that innocent go-to goodie we all remember, filled with everything we know and love about a totally tipsy tequila shot.

Don’t be fooled by their adorable look, their sweet and tempting sprinkles, their hypnotic nostalgic notions of days gone by,..do not be fooled.  These angelic looking tarts pack a devilish punch and are NOT for the kiddos…but they are for the kiddo inside all of us errr..”elders”..haha!

~Make LOTS!

What you’ll need:

POP TARTS (8 count)

2 cups of dry pancake mix

1 cup of tequila…your fave!

The juice and zest of one lemon (or limes..if you choose)

The glaze:

1 cup powdered sugar

lemon juice and zest

food coloring..I used pink.

colorful sprinkles

salt & sugar for topping

oil for frying..I used canola

Directions:

Mix up the pancake batter by using the tequila and lemon juice to get a smooth, semi-thick consistency.

Add in the zest…

Now coat the pop tarts in a thin, even, and light coating of the batter…

Into the hot (350 degree) oil to fry until lightly golden on both sides…

Let them drain on a cooling rack.

…and mix up the glaze by combining the powdered sugar with the lemon juice and an optional splash of tequila for good measure, until thick and smooth…

Stir in the food coloring until you achieve the color you want your tarts…

Now glaze the tops of those tarts…

And addd on the sprinkles…

Let them set up, and then do what comes naturally…

Drink, I mean EAT them!  ~Enjoy,…I mean..CHEERS!  🙂
