Well, it appears that the sweet and savory kick that I’ve been on lately is alive and well everyone.  As proven here.

Annnd, I’m sure some of you are happy, and some of you .. uh, not-so-much, but wherever you fall on that scale.. this little onion ring mash-up deserves at least a tiny little chance.  You won’t be sorry!

I’m talking about crispy, slightly spicy, cinnamony, onion rings that not only bring that classic fun and flavor to your table, but also offer a tasty twist on our favorite sweet snack.. CHURROS!  Yeahh, Churros!

Oh, I know how crazy this sounds to regular folks, and by “regular folks”, I basically mean anyone who isn’t me..lol!  But these flavors work.. like, they really-really work!  .. in your mouth, in your heart, in your soul.. on. your. table!

~What you’ll need:

1-2 large white onions

1 cup pancake mix

1 cup crushed cinnamon toast crunch cereal

1 egg

1 cup milk.. or water

1 tsp. cinnamon

1/2 cup cinnamon/sugar mix

1 dash of cayenne pepper..to taste

oil for frying..I used veg

caramel sauce/topping..for dipping

Directions:

In the food processor (or with muscles) ..crush up the cinnamon toast crunch into fine crumbs.  ..set aside..

In a bowl, combine the pancake mix, crushed cereal, egg, cinnamon, and milk until well blended..

The batter should be like a pancake batter consistency…

Slice the onions into approx. 1/8-1/2″ thickness…

In a med bowl, combine the cinnamon/sugar with a dash of cayenne pepper…

Coat each onion ring generously in the batter, and place into the hot (350 degree) oil.  Fry until they’re golden on all sides…

Generously coat the hot onion rings with the cinnamon/sugar mixture…

Serve therm up…

And don’t forget the caramel sauce for delectable dipping…

And if you can, use a plate to keep things.. um… clean.

These can get a bit messy… but you won’t care!  ~Enjoy!  🙂
